BeefSteaker is a V2A stainless-steel meat sampler with a cutting diameter of Ø 25 mm for manual excision of tissue pieces from carcass surfaces. Designed for microbiological sampling, it works like a cork borer: the sharp crown is twisted in by hand to cut a circular tissue sample of 5 cm², which is then removed with scalpel and forceps. Slaughterhouses and cutting plants require regular bacteriological checks of carcasses such as cattle, pigs, sheep, goats and horses as part of process control and hygiene monitoring. Sampling follows the destructive punch or excision method in line with DIN EN ISO 17604:2015-12. A hole in the crown prevents air compression and aids sample ejection. The sharp stainless-steel cutting edge enables clean cuts; the tool can be sterilised by flaming or steam sterilisation. Beyond carcass testing, this sampler from manufacturer Bürkle is also useful in histology, medicine, food production, dairies and agriculture. Net weight is 0,328 kg.
