Aged frying oil can generate potentially harmful substances such as acrylamide that transfer into food; the FOM 330 monitors total polar materials (TPM) and temperature so that oil is replaced only when necessary, reducing waste while safeguarding HACCP compliance. The instrument measures temperature from +50 °C to 200 °C and TPM from 0 % to 40 %, with resolution of 0,1 °C and 0,5 % and accuracy of ±1 °C and ±2 %. It features IP67 protection, approximate weight of 200 g, dimensions of 314 × 54 × 22 mm and a user-replaceable 3 V lithium battery.
