The professional yoghurt handheld pH/°C meter with pH electrode FC2133 is a robust, waterproof, HACCP-compliant instrument for measuring pH and temperature in yoghurt. Yoghurt is produced by fermenting milk with live cultures such as Lactobacillus bulgaricus and Streptococcus thermophilus; lactose is converted to lactic acid, pH falls and milk proteins coagulate to form the familiar texture. Producers typically stop incubation by rapid cooling once a target end point between pH 4,0 and 4,6 is reached, balancing acidity, consistency, flavour and resistance to unwanted microbes. Accurate pH control therefore underpins batch-to-batch texture, taste and shelf life and helps limit defects such as excessive bitterness or syneresis.
