Ammoniumijzer(III)citraat (ijzer(III)ammoniumcitraat) wordt gebruikt als additief in voedingsbodems voor de detectie van Listeria-soorten. Hydrolyse van esculine door Listeria-soorten resulteert in 6,7-dihydroxycoumarine, dat reageert met ijzerionen en een zwartkleuring van het medium veroorzaakt. Bovendien is aangetoond dat ijzerammoniumcitraat de groei van Listeria monocytogenes verbetert (Cowart en Foster (1985) J. Infect. Dis. 151:721).
