An infrared thermometer reads a surface by its radiation. The reading depends on emissivity: a shiny metal lies unless the setting is changed. It does not read the inside of a bottle. Distance and spot size decide which surface is actually measured.

A thermometer reports a temperature. A liquid-in-glass thermometer is a calibrated column. A digital thermometer is a sensor and a display, and the sensor, not the display, is what is calibrated.
